瑞卡達杏仁派Ricotta Almond Pie

Italian mom’s secret recipe

Ingredients for the base

300 gr flour
2 eggs
100 Gr butter
100 Gr sugar
a bit of salt

Ingredients for the filling

500gr of DIDA新鮮瑞可達Fresh Ricotta

1 egg

100gr sugar

100gr amaretti (almond cookies)

Ingredients for the topping

100 gr of dough

40gr amaretti (almond cookies)

20gr almond (crumbs or slices)

1)Put the flour on a flat surface and dig a hole in the middle, then add into it the eggs, the sugar and the butter (at room temperature because we need it soft) and a bit of salt.

Mix it all and try to not over mix the dough in order to prevent that the butter melts too much making the dough too greasy, we need to obtain a friable and elastic dough.

Make a ball with the dough and put it into cling film and let it sit into fridge for 30 minutes

2)Crumb the cookies with a mixer, in a bowl mix the ricotta with sugar and egg then add the cookies crumbs.

How to assemble the pie:

First keep aside 100gr of the refrigerated dough, we will use it later for topping

Roll out the remaining dough and put it in a pie mold (previously greased with butter)

Add on the ricotta filling

For the topping mix in a blender the 100gr dough with the cookies, add on top of the ricotta along with the almond

Pre-heat the oven, cook the pie at 180 degrees for 35/40 minutes
