Spec: 200g (Cut and wrapped in special cheese paper)
Delicious cheese from Fromagerie Lincet in Burgundy. It's a pasteurized triple creme, made with full-fat cow's milk and fresh cream. It has a beautiful rich and whipped butter mouthfeel. Not just any mild triple creme, this one has a thin rind that gives off mushroom aromas and a tangy finish. Makes a perfect breakfast lunch dinner or dessert. Don't forget to pair it with champagne or a dry sparkling drink!
Cheese nerdy talk:
Within the Like-Brie segment, there's a group of cheese that's called Double Cream (butterfat 60-74%) and Triple Cream (butterfat 75%). They usually taste rich and buttery and cheesecakey.
Just because you see the word "butterfat" and the number "75%", don't be fooled into thinking, OMG, a piece of cheese contains 75% fat! That'd be insane and certifiable BUTTER (which literally has 80% fat). It means if a piece of cheese is 50% water (yes real cheeses tend to have water / moisture) and 50% solid, the solid part has 75% butterfat, which means (math time) this piece of cheese has 37.5% fat.
