What a statement. This cheese is Burgundy’s answer to the bloomy rind cheese so famously made in Normandy. Created in late 1800s, originally called Gourmets' delight, it was later renamed to Brillat Savarin, honoring the French gastronomer Jean Anthelme Brillat-Savarin, who pretty much created the concept of gastronomy, or modern day food blogging.
The flavor is no disappointment to its origin story. One of the best triple-creme cheeses for sure. 75% butterfat, thin snowy rind, lactic flavor with a very slight mushroomy flavor. Everything is in its right place and balanced like a smooth criminal.
A bottle of fine bubbly wine will go down nicely with with this cheese.
