Shaped like a cantaloup with tiny holes on its skin and hard orange interior, Mimolette is one of the most recognizable cheeses in the world. Traditionally made in Flanders, the northern part of France, it was invented in the 17th century to contend with Dutch's popular Edam.
Mimolette owes its unique look to a couple of factors: using cheese mites to help with rind development, adding Annatto to the curd to create the orange color, and a washed-curd technique that helps cheese taste less acidic and "sweeter".
The extra aged version packs a full nutty and complex flavor that leans a bit on the salty side. Try a bolder wine or stouts.
